Do you ever dream about eating a whole chocolate cake and not feel bad or completely guilty afterwards? Well now you don't have to with this HEALTHY chocolate cake recipe. Or at least a healthi-ER chocolate cake recipe.

Let's be honest, one of my favourites chocolate cakes of all time is my Red Back Cake. It's oozy, aromatic and the ultimate indulgence for the chocolate lovers out there but it's not exactly on the WeightWatchers' list of recommended things to eat, right?

So to convince you that chocolate cakes CAN be made healthier and still delicious, I've created this easy recipe so you can impress your family, friends, guests or just challenge yourself to try something new and then eat it regret-free. (except for the coffee cream on the top which you can choose to add or not. You can always reduce the amount)

This was the cake I did for my partner Juliana's birthday a couple of months ago, as she became obsessed with healthy food and plant based diets. (Good for me as my colon issues make me stay off sugar, flour, dairy and many other things at the moment).

So the million dollar question... 

How do you make a healthy chocolate cake?

There are many ways to make healthy cakes of course, but these are the main ingredients that I include in mine…

75gr coconut oil or grapeseed oil

200gr Luker Chocolate Tumaco dark chocolate

200gr almond meal

15gr cocoa powder

180gr organic rice malt syrup or if you really want no sugar go for xylitol or erythritol (half)

5gr salt

230gr oat-almond or coconut milk

20gr gluten free flour or almond meal extra

5gr baking powder

15gr peanut butter(optional)

15gr Esti Garcia's Sugar Free Strawberry Jam 

Gold leaves for garnish

Method

Melt the chocolate and combine everything together. No specific order required which makes it pretty easy.

Bake at 160c for 30-40 minutes approximately.

For the Coffee ganache

600gr cream 35%

300gr Luker Chocolate Dark chocolate 65%

100gr Strong coffee (espresso like)

1 gelatine sheet (gold) soaked

Vanilla beans (optional)

Warm up the cream, add the gelatine and combine with the coffee. Pour over chocolate and emulsify. Let it cool down completely and then whip until foamy and stiff peaks form. Pipe on top as desired and naughty as you want.

How easy was that? now, go to heaven :)
