Hey there! I'm Esti, a passionate pastry chef (or pâtissier) and chocolatier. Originally from Colombia, I'm now proud to call Australia my home. I've dedicated my life to honing my skills and striving to be one of the best in my field. In fact, I won the prestigious Best Plated Dessert award at Savour Patissier of the Year in 2018!
My product range is always evolving and guided by your preferences and feedback. I believe in creating chocolates and cakes with knowledge and using high-quality, ethical ingredients that support local communities while minimising our environmental impact. When I create, I pour my heart and soul into every masterpiece, aiming to surpass expectations and leave a lasting impression on your taste buds.
Throughout my journey, I've gained invaluable professional experience at renowned establishments such as Est. Sydney, Rockpool Bar & Grill, Porteño, Bodega Tapas Bar, Bodega 1904, Stanbuli, Bubo Patisserie in Barcelona under the guidance of the famous Carles Mampel, and even at Azurmendi, a 3 Michelin-star restaurant in the Basque country of Spain.
To further enhance my skills, I've trained at prestigious institutions like L'ecole du Grand chocolat Valrhona in France, Atelier Melissa Coppel in Las Vegas, Savour Chocolate & Patisserie School in Melbourne, and Aula Sole Graells in Barcelona.
In addition to my culinary adventures, I've had the pleasure of participating in exciting projects. From hosting a Colombian pop-up dinner in San Sebastian, Spain, where we showcased the rich flavours of Colombian gastronomy alongside award-winning chefs, to conducting workshops right here in Sydney, sharing my chocolate-making techniques with fellow enthusiasts. And let's not forget about my family's unique Colombian cuisine initiative in Pereira, Colombia, where I played a key role in creating their pastry menu and bakery using artisanal products.
