They’re Back. After Four Years… Esti’s Limited-Edition Christmas Puddings Have Returned.
If you’ve been following my pastry journey for a while, you already know this:
I haven’t made my Christmas puddings in over four years.
Every December since then, my IG DM fills with messages like:
“My mum keeps asking about your pudding. She swears it was the best she ever had.”
So this year…
I finally said: Yes. It’s time.
And not only are they back, they’re better than ever.
A Limited Batch With a New Story
This year’s Christmas puddings are reborn with a fresh approach, created in collaboration with HAM Café in Cronulla, where I currently work as a pastry chef.
HAM’s heritage is Greek, my roots are Latin American, and together we’ve reimagined a classic Australian tradition through craftsmanship, culture, and warmth.
It’s still the pudding you remember…
but layered with subtle Mediterranean elegance and the signature Esti flair.
This year’s batch features:

2 month aged Australian dried fruits

A blend of rum, brandy, fortified wine and bitters

Cultured butter, free-range eggs

Citrus peel, warm spices, almonds, quince paste and vanilla bean

A slow, gentle cook to build depth and tenderness
I’m making a very limited quantity.
These are handmade, slow-aged, and individually crafted.
This isn’t mass production — it’s an annual ritual.
